**Ingredients:**

- 2 cups sushi rice

- 2 cups water

- 1/4 cup rice vinegar

- 2 tablespoons sugar

- 1 teaspoon salt

- Nori sheets (seaweed)

- Fillings of your choice (e.g., cucumber, avocado, crab, smoked salmon, tuna)


**Instructions:**


1. Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

2. In a rice cooker or pot, combine the rinsed rice and water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low and cover. Cook for about 20 minutes or until the rice is tender.

3. While the rice is cooking, combine rice vinegar, sugar, and salt in a small saucepan over low heat. Stir until the sugar and salt are dissolved. Set aside to cool.

4. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture until well combined. Be careful not to mash the rice.

5. Lay a sheet of nori shiny side down on a bamboo sushi mat or a clean kitchen towel.

6. Moisten your hands with water to prevent the rice from sticking, then spread a thin layer of rice evenly over the nori, leaving about 1 inch of space at the top.

7. Arrange your desired fillings horizontally across the middle of the rice.

8. Using the mat or towel, roll the sushi tightly away from you, pressing gently as you roll to ensure it holds its shape.

9. Once rolled, use a sharp knife to slice the roll into bite-sized pieces.

10. Repeat the process with the remaining nori, rice, and fillings.

11. Serve the sushi rolls with soy sauce, pickled ginger, and wasabi.
