Recipe of Afgani Karahi.

 


Afghani Karahi, also known as Afghan Chicken Karahi, is a flavorful dish that combines tender chicken with aromatic spices. Here's a simple recipe:


Ingredients:

- 1 kg chicken, cut into pieces

- 3 tablespoons vegetable oil

- 2 onions, finely sliced

- 4 tomatoes, chopped

- 2 green chilies, sliced

- 1 tablespoon ginger paste

- 1 tablespoon garlic paste

- 1 teaspoon cumin seeds

- 1 teaspoon coriander seeds

- 1 teaspoon black pepper

- 1 teaspoon red chili powder

- 1 teaspoon turmeric powder

- Salt to taste

- Fresh coriander leaves for garnish


Instructions:

1. Heat oil in a karahi (wok) or large frying pan over medium heat.

2. Add cumin seeds and coriander seeds. Fry for a minute until they start to crackle.

3. Add sliced onions and fry until they turn golden brown.

4. Add ginger paste and garlic paste. Cook for a minute until the raw smell disappears.

5. Add chopped tomatoes and green chilies. Cook until the tomatoes are soft and mushy.

6. Add chicken pieces to the karahi. Mix well with the onion-tomato mixture.

7. Add salt, black pepper, red chili powder, and turmeric powder. Mix until the chicken is well coated with the spices.

8. Cover the karahi and cook on low heat for about 20-25 minutes or until the chicken is cooked through, stirring occasionally.

9. Once the chicken is cooked, uncover the karahi and cook on high heat for a few more minutes to reduce the gravy and thicken it slightly.

10. Garnish with fresh coriander leaves.

11. Serve hot with naan or rice.
